
It seems everyone loved our Sierra Nuggets. So this week, we are posting Chela’s, Peanut Butter Cookies. Buttery and light, these cookies are practically perfect.
Preheat oven to 375 degrees
Cream together:
½ cup granulated sugar
½ cup brown sugar
½ cup chunky peanut butter
½ cup shortening
¼ cup butter
1 egg
Sift together then add to the above:
1 ¼ cups all purpose flour
¾ tsp baking soda
½ tsp baking powder
¼ tsp salt
In a large bowl mix the two groups together. Cover and refrigerate for at least 3 hours.
Shape dough into 1 ¼ inch balls. Place about 3” apart on ungreased cookie sheet. Flatten in a crisscross patter with fork dipped in flour.
Bake until light brown 9–10 minutes. Cool 2 minutes; remove from cookie sheet and allow to fully cool. Makes about 3 dozen cookies.
