Recipe: Apple Bran Muffins

Apple Bran Muffins

  • 1 cup flour
  • 2 tsp baking powder
  • ¾ tsp salt
  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • 1 cup All Bran cereal
  • 1 cup buttermilk
  • 1 cup petite diced apple
  • 1 egg (1/4 cup eggbeaters can be used)
  • 3 tbsp canola oil
  • ½ cup chopped walnuts (if desired)

In a large bowl mix baking powder and flour. In a smaller bowl, mix beaten egg, All Bran cereal, milk, apples and Canola oil. Let this mix soak for five minutes then add to dry ingredients.

Add ½ cup chopped walnuts if desired. Fill muffin tins lined with paper or foil baking cups. Bake in preheated 350 degree oven for 20 minutes

You may substitute ½ cup of flour with whole wheat flour to make it healthier, but muffins will be heavier in texture.
